On Saturday, 3rd October at 5:30 pm, in the sala Sant'Ansano, Martina Tapinassi, historian and cultural popularizer, will present her book "Panis. Storia e archeologia del pane e della panificazione" (Panis. History and Archaeology of Bread and Breadmaking), published by Arbor Sapientiae.
The volume traces the millennia-long history of bread through written sources and archaeological and material evidence, portraying one of humanity's oldest processed foods, closely tied to the development of agriculture and the first settled societies. The story begins 30,000 years ago, when the first populations started grinding cereals to obtain a coarse flour to cook on heated surfaces. It then moves through ancient Egypt and the Greco-Roman world to the Middle Ages, when bread became the cornerstone of the European diet, shaping the organization of work and social relations.
The author will be in conversation with Debora Barbagli for the Fondazione Antico Ospedale Santa Maria della Scala.
